All of their wines undergo native fermentation and remain unfined and unfiltered at bottling to preserve their natural, wild character.
They work diligently every year to ensure that their wines convey millions of years of geographical history to those who drink them.
From Jory (Volcanic) to Marine Sedimentary, soil type affects the fruit characteristics of the wine (red, blue, or black) as well as its spice, earth, and sweet or savory attributes.
Elevation is significant; vineyards at lower elevations (ie: sedimentary soils) produce more fruit-forward wines, while those at higher elevations (ie; volcanic soils) provide a more mineral-driven result.
They only work with four clones – Pommard, Wädenswil, Dijon 777, and Dijon 115.
